      This is to kill bacteria in the milk that could make us sick and also that make the milk go off faster.

      The following bacterial pathogens are still of concern today in raw milk and other dairy products:

      Bacillus cereus.
      Listeria monocytogenes.
      Yersinia enterocolitica.
      Salmonella spp.
      Escherichia coli O157:H7.
      Campylobacter jejuni.

      Exactly, we need to pasteurise the milk because in raw milk there are bacteria that can make us sick.
