Grass has some substances that humans cannot digest. The most important is cellullose. The body needs another substance called cellullase (an enzyme) to be able to digest it.

We do not have the enzyme to digest grass and we also do not have the microbes which ferment the grass in cows.. this are big players in the digestion of grass in cows and so because we do not have these bacteria (and our guts are not suitable for them to live in) we cannot digest grass. But luckily we get to eat much tastier food and a wide variety of foods!!
