Ethylene is a hormone found in the peel of the banana once the banana is fully developed. It is responsible for modifying the taste, color, texture, and softening of fruit. However, once the banana is ripe the ethylene keeps working and leads to the banana bruising and going bad, we can’t stop this from happening but we can slow it down by keeping the bananas in a cool dry place!
