Yes you can.. although sugar free chocolate is usually made with some sort of sweetener added (such as for diabetics) as the other ingredients can be very bitter.

Yes, actually original chocolate had no sugar in it and was consumed by the Mayans and Aztecs. What we usually eat is sweetened chocolate but you can also find unsweetened chocolate called also baking chocolate or bitter chocolate. It is quite bitter but it is pure chocolate only from cocoa.

Chocolate is made from cocoa beans. The beans are fermented (some small and tiny bugs eat the sugar inside the beans), then the beans are dried, cleaned and roasted. Then the nib (like a kernel inside the cocoa bean) is extracted and kind of a juice is made by grinding it. This is what is called chocolate liquor and is the pures form of chocolate. Usually this chocolate is separated into cocoa solids and cocoa butter. With these two things and sugar you make the chocolate we usually eat, and milk it is sometimes added so it is not so bitter. There are plenty of chocolates types!
