As golnaz has said gluten is a protein found in foods such as wheat, barley and rye. If people have a disease called Celiac disease their body reacts to the gluten when it reaches the small intestine. This results in the symptoms of celiac disease. Over a long period of time having celiac disease and still eating gluten will impact on the structure of your gut and prevent nutrients from being absorbed so it is very important that someone with this disease avoids gluten.
